Whisk dry ingredients together. Pour in your wet ingredients and mix until just combined (don't overmix!).
Heat your pan over medium heat. Melt a little bit of coconut oil and cook your pancakes, flipping once bubbles emerge and the edges dull and turn opaque. Cook a few more minutes, about 1-2, upon flipping. The dough makes 6 pancakes.
* If you haven't got coconut flour at home, you can also use cornstarch instead. ** You can also use vanilla sugar, maple syrup or the sweetner of your choice.
